Mid week easy cooking is a must when you are trying to juggle the world: the kids, work, house chores, school runs , sports activities (and the list goes on!)
So I thought I’d share with you a quick, easy 20 minute healthy recipe that I cook for my boys often, it’s called Methi garlic salmon.
Let’s start with salmon, it has been drummed into me from such an early age as ‘Brainfood’…..”It’s so good for you, good for your skin, good for your memory etc” mum would say without fail every time she cooked fish for us (obviously I hear myself saying the exact same words to my boys now as well). It’s packed with protein, the omega 3’s as well as being a great source of vitamin D which being of Indian heritage I lack during the winter months.
Then there is methi, what is methi?
Methi is a staple in Indian cuisine, fresh fenugreek leaves is known as methi. It’s available from most Indian grocers but for this recipe you can also use dried fenugreek leaves which can be purchased from a supermarket.
When I buy fresh methi, I usually buy 3-4 bunches and then wash and freeze it to use in other dishes such as methi chicken or methi prontas which is a lovely Sunday morning breakfast treat.
Fresh methi leaves also adds an amazing aroma and taste to most curries, chicken, fish, lentils.
Again from mum I’ve learnt to appreciate the health benefits of methi as well as it’s an anti inflammatory and also high in fibre.
So here we go:
Ingredients
- 3 pieces of salmon
- Fresh fenugreek leaves
- Garlic
- Lemon
- Salt
- Re chilli flakes (optional)
Method
- In a bowl, add the washed chopped methi leaves, lemon juice, garlic, salt and red chilli flakes
- Mix together to make a marinade
- Add the salmon and gently mix coating the salmon with the marinade and leave to rest
- Preheat a pan and add a touch of oil
- Cook the salmon on a medium heat for 3 to 4 minutes and then turn the salmon pieces over.
- Cook until the fish is flakey and easily breaks with a fork.
- Serve with either rice, potatoes, wedges or salad/ veg and simply enjoy
